Healthy Chives Mashed Potatoes
Serves 4 (serving size: about 1/2 cup)
2 cups mashed potatoes
2 tablespoons chopped fresh chives
2 tablespoons low fat sour cream
2 tablespoons fat-free milk
1 tablespoon butter
1/8 teaspoon freshly ground black pepper
Bring a pot of salted water to a boil. Add potatoes and cook until tender but still firm, about 15 minutes; drain. In a small saucepan heat stir in chives, sour cream, milk, butter, and pepper. Using a potato masher or electric beater, slowly blend milk mixture into potatoes until smooth and creamy. Season with salt and pepper to taste.
